The Local Coffee Shop

How about restaurants, parks, malls or my favourite, the local coffee shops? What I would like to share here is to keep a real look out and be totally aware of the possible gig locations and don't limit yourself. Many musicians complain about the lack of gigs they have, but when I ask them to look closely at the type of venue they are searching, the repeated pattern seems to be clubs, stadiums, concert halls and pubs.

Make it your second residence! Depending on the venue, you can drop in several times and build links with staff and get a feel for the type of customers that come there. Coffee shops are the next link in the chain of great gigs.

Drinking coffee Depending on the type of music, coffee shops represent the perfect venue for musicians to meet with their perfect audience, and if they are your right audience, what must your audiences be doing if they're not watching you?

I personally like these places because it's nice and cosy, allowing you to build deeper relationships with the crowds. It's like the middle space, or the third space. Coffee shops are great place for people who want a break from both work and home.

You can guarantee most of them will be at your event. By placing several posters in the coffee shops were the same people go everytime between home and work, it is something they can't miss, and are definitely going to remember. If people see your name several times, they remember it, and create a link in their mind. Something that works day in, day out is the power of repetition.

So how do you get booked?

It's important to target the right show for the right venue. If you play acoustic guitar and sing with a soft voice, don't go to a coffee where staff shout to customers that their order is ready.

Also pay attention to the peak and off-peak times at the coffee shop as you can use this to your advantage really easily. If you play in the morning when it's peak time and attract many customers for the shop, you'll notice that the lunch area may be very low in customers, so pitched correctly, you could ask the shop management if you could play in the afternoon, and attract the customers that way.

Don't expect to be paid by the coffee shop management, but one way to grow your audience is to collect mailing list signups. This way you can inform them by post or e-mail where you are next because there will definitely want to be a part of your music.

The most important thing is that you have already built up great relationships so that you can emphasise how you will bring more people to their place.

Coffee Making Without Technology

In this day and age, coffee making has become something of an art. Specialty coffee shops have sprung up all over, and it would be hard to drive down a city street without seeing at least one or two. These days, coffee is more than just brewing a strong cup on the stove. There are fancy coffee makers, espresso machines, and cappuccino machines, and a host of coffee flavors and different coffee additives, such as flavored creamers or syrups.

There are times, however, when making a fancy cup of coffee is out of the question. Perhaps you are out roughing it in the wilderness, you forgot your stove-top percolator, and you still want at least a good black cup of coffee but aren't sure what to do. Believe it or not, there is a trick to coffee making that doesn't include electricity or even a stove-top percolator.

Of course, even if you are lacking a coffee maker or a coffee pot, you are still going to need your basic ground coffee, and you are going to need a heat source. Hopefully, if you are on a remote camping trip, you still remembered the coffee, even if you didn't remember the stove-top percolator; and of course, most campers have campfires or camping stoves fueled by some type of gas. It can actually be a rewarding experience to use some old-fashioned ingenuity when it comes to the simple act of making coffee without a coffee pot; it helps us remember that we are not always slaves to modern technology.

The method you can use to make yourself a cup of coffee is to use a couple of paper towels, a regular pot or pan, and a cup - either a coffee cup or any cup that can hold hot liquid. Place a couple of paper towels over the cup, and then place some coffee grounds on paper towels. Heat the water over your campfire or on your camp stove until it is boiling, and then carefully, and slowly, pour the heated water over the coffee grounds and paper towels so that it filters into the cup. The more slowly you pour the water in, the stronger your cup of coffee should be. If you don't think the coffee is strong enough the first time, carefully remove the paper towels with the coffee grounds on top, pour the liquid from the cup back into the pan, put the napkins or paper towels and coffee grounds back on top of the cup, and repeat the procedure. It shouldn't take more than two times to make a strong enough cup of coffee. This may seem like a long and tedious procedure, but you'll get your cup of coffee, and you'll probably feel rather proud of yourself!

Choose the Correct Coffee Machines

But I am not alone. As time goes by I am sure to gather more Coffee Making equipment as I am a self confessed coffee addict. One Coffee Machine that is out permanently and two Coffee Machines that like it in the cupboard! Personally I have three. Most kitchens will have some sort of Coffee Machines in them.

Then there are the new fangled pod coffee machines, which infuse hot water through coffee pods, and the top-notch espresso makers. You can still get the old-fashioned drip machines, but the even more old-fashioned presses and hand brew machines are back in style. Not only do you have to choose among the dozens of franchise coffee shops, coffee types, espresso, cappuccino, and all other kinds of java, you also have to worry about what kind of coffee machines to work with. Nowadays, coffee is all the rage.

Honest! You may have to clean the filters after each use, but this little bit of extra work is well worth it. Permanent filters make sure that the flavor molecules from the coffee grinds pass through into the water, but more importantly, the permanent filters do this without adding unwanted flavors. The key to these machines is using a gold, nylon, or other type of permanent filters. They use a method of brewing that can create the most delicious coffee. Drip coffee machines, though, are still one of the easiest types to use for beginners and coffee aficionados alike.

If you absolutely have to use paper filters try rinsing them with hot water first as this helps to wash away some of the after taste. They impart an aftertaste into the finished product, and they absorb some of the special flavor molecules and aromatic oils from your coffee beans, which are what gives your cup of joe its tantalizing taste. What is wrong with paper filters for coffee machines?

This means water temperatures that are between 195 degrees and 205 degrees to ensure the best flavor extraction from the coffee grounds. Be sure to only add the right temperature water to the mix. When using drip coffee machines, stick with medium to fine grinds of coffee.

And if you want to follow the most expert rules for using drip coffee machines, you should remove the grounds from the filter before the last couple of drops of water have filtered through. This prevents your coffee from being over-extracted and overly bitter. One last thing. Before you serve this delicious coffee to yourself or to a guest, stir it.

You wear whatever you feel like, watch all sorts of sports and drive a car you liked at the time of purchase; not because of its make, you just liked it. As I mentioned in our last article there are many types of loyalty besides brand, sport or club loyalty. Today we will explore one of the most important types of loyalty. One which I call: 'coffee shop loyalty'. This is not to be confused with loyalty programs which must by default be a keen topic of discussion.

Many of us have a favourite coffee shop. We go there week after week. We meet our friends there; we may take business associates there. Not only do we offer the owner repeat custom, we bring friends along. By bringing business associates for coffee we are, in effect, recommending the shop as a good place to visit to the broader community. This increase in custom costs the coffee shop owner not one single dollar. The owner potentially acquires well-populated chains of customers from your friends and business associates through a single alliance; you. He pays you nothing.

This is massive, free advertising. You must ponder its success and the reasons for its success frequently. Can we find the secret recipe? To tell the truth, there is no one single and global solution. There are many aspects to 'coffee club loyalty' because we see people sitting, chatting, drinking and enjoying themselves at crowded coffee shops all across town. Examine those that you see often-crowded; examine even more closely those that seem to have a few less patrons than the others.

Why scrutinize empty shops? Surely we want to see what the good ones are doing to keep such repeat crowds sitting at their tables? Absolutely right! But is it not equally important to see if we can find out what the empty ones do, don't do, in order to remain empty? They are so regularly empty; it must be planned so it is up to us to see what they have in their plan. We will leave it out of our planning.

Gathering information about people is just as important as gathering information about the goods we sell or the services we supply. So how do we start, remembering the budget for research is small? Think back for a moment to your favourite coffee shop and see if we can get some sort of criteria which we could use to plan for a successful coffee shop. See if we can stretch this to our online store. Make mental notes next time you are there. Better still take pen and paper. Ask a few of the regular customers why they keep coming back. Do this over several visits so that you can have time to analyse the thoughts of other customers and formulate more focussed questions for yourself. Do you see patterns emerging? I bet you do. Are you going there this week?

Staff turnover is typically high in coffee shops. My favourite shop has a high turnover too but the staff are always friendly, happy, courteous, know how to react with patrons from a large number of different backgrounds. The owner must look after staff as well as patrons. New staff quickly learn your name. Service is brisk, efficient, and reliable. There is nothing particularly expensive or outstanding about the décor. It is comfortable, rather than modern. Many regulars come several times each week and stay for much longer than it takes to drink a cup of coffee. There is nothing special about pricing. The menu is fairly static; functional. They occasionally run a special night such as their birthday party or to promote a local band. The owners are always mingling with patrons. It is in a good location; a lot of foot traffic, close to other shops and has parking near by. And that is about it. I will be there again next week.

You are now doing just what the big corporations discussed previously are doing. The budget is slightly different. You are finding out what customers do and do not like. When we set up a store online we tend to forget that our customers will be the very people we talk to at the coffee shop. Online customers are coffee shop customers too. They know what makes them leave or stay; buy or not. Your own friends are an equally valuable source of information. Ask them too.

Getting the right blend is the key to 'coffee shop loyalty'; it is the key to online success.

A Unique Marketing Spin for a Coffee Shop

Three business partners contacted me about creating a marketing plan for a coffee shop something extra would have to be added.

Since they had already signed the lease on the location that was to large to succeed as just a coffee shop I created a plan for the coffee shop to be used as a place for community service groups, discussion groups, art and theatre groups, and special interest groups. I convinced them to follow a plan that I created that would solve the extra space problem for them. I met with the three partners where I discussed my concerns about there new business venture.

The coffee shop will have a part time program director who will work with the various groups to help facilitate community meetings and set up interesting forums and discussion groups, and to provide other entertainment for the college students. the coffee house will strive to become a meeting place for various community groups, organizations, associations, and a place for college students to meet after classes. After 9:30 A.M. In the morning it will offer coffee, cappuccino, and breakfast muffins and an assortment of pastries to the people in the morning, 65% who are professional. I arranged for the coffee shop to operate a two-prong strategy.

The coffee shop will set its pricing approximately 25 percent below typical Starbucks' pricing. To capitalize on this the coffee shop set up a separate espresso station, with instruction on how to make a great espresso. The shops with the best tasting drinks did five to ten times the business of shops with average tasting espresso. I conducted some research on successful coffee shops and found that the espresso machines contribute well over 50 percent to a coffee shop's revenue and even more to its profits.

Two employees along with the manager were trained in the proper technique of making specialty coffee drinks. I suggested that the coffee shop purchased a high-end cappuccino coffeemaker that has a shiny copper and bronze exterior that can be set out in a separate station to attract interest to specialty coffees. I suggested that the coffee shop is the merchandising and taste of its specialty drinks, which involves having the right coffeemaker and coffee, and people who understand the art of making good coffee. I worked with the part time program and sales director with finding groups and creating groups that will hold meetings in the coffee shop. A discount was offered to any group or individual who would bring in groups. I created a web site explaining what the coffee shop has to offer, and what meetings are taking place and how they can attend these meetings. The coffee shop will send out coupons to groups offering a 25-percent-off discount.

I bought a list from a list broker of organizations, associations, and local community groups in the area. I wrote solicitation letters to them explaining what services the coffee shop had to offer. I created online discussion groups that would involve potential clients for the coffee shop. Articles were written for on line publication for the organizations, associations, and local community groups that held meetings at the coffee shop. These articles contained links to the web site for the coffee shop that would list the upcoming events and discussions that would be held at the coffee shop. Print ads were also taken out in a small local publication that the targeted market reads.

You must promote your success to get new business. I got permission from the clients who are using the coffee shop for meetings to use there names in the next set of ads that will run, and on the new web site. The coffee shop had 8 regular groups, organizations, and associations holding weekly meetings in the coffee shop. The coffee shops morning business was doing 10 percent better that was forecasted. After about 5 months the results of these marketing efforts had paid off.

The Coffee Culture in the USA

It wasn't until I moved to the US that I started drinking coffee regularly and became what they call in the Netherlands a 'koffieleut', which translates literally into ‘coffee socialite.' Although the average European drinks more coffee per year than the average American, the cultural importance and its effects on the average European seems to me smaller than that on the average American. After all, coffee is a cultural obsession in the United States.

Chains with thousands of branches like Dunkin' Donuts or Starbucks dominate US daily street life. Especially in the morning (90% of coffee consumed in the US is in the morning), millions of white foamy cups with boldly imprinted pink and orange logos bob across the streets in morning rush hour and on the train. Coffee drive-ins are a saving grace for the rushing army of helmeted and tattooed construction workers. During lunch break, men and women in savvy business suits duck into coffee shops.

Students chill out from early afternoon till late evening on comfy couches at coffee lounges around campus. Police officers clutch coffee cups while guarding road construction sites on the highway. In short, coffee drinkers in the United States can be found just about anywhere you go.

This mass-psychotic ritual causes Americans to associate Europe above all with cars that oddly do not contain cup holders (to an American this is like selling a car without tires), or with the unbelievably petite cups of coffee European restaurants serve, so small that my father-in-law had to always order two cups of coffee. It is my strongest conviction that the easily agitated and obsessed nature of the ‘New Englander' can be blamed on the monster-size cups of coffee they consume. Not without reason is the word 'coffee' derived from the Arab 'qahwa' meaning ‘that which prevents sleep.' Arabs have cooked coffee beans in boiling water since as far back as the 9th century and drank the stimulating extract as an alternative to the Muslims' forbidden alcohol.

These days coffee is second only to oil as the most valuable (legally) traded good in the world with a total trade value of $70 billion. Interestingly, only $6 billion reaches coffee producing countries. The remaining $64 billion is generated as surplus value in the consumption countries. Small farmers grow 70% of world coffee production. They mainly grow two kinds of coffee beans: Arabica and Robusta. About 20 million people in the world are directly dependent on coffee production for their subsistence.

Although the consumption of coffee per capita in the world is decreasing (in the US alone it decreased from 0.711 liter in 1960 to 0.237 liter presently), world consumption is still increasing due to the population explosion. Considering that coffee consists of either 1% (Arabica), 2% (Robusta) or 4.5%-5.1% (instant coffee) caffeine, the average American consumes at least 200 to 300mg (the recommended maximum daily amount) of caffeine a day through the consumption of coffee alone.

The place I frequent to down a cup of coffee is the Starbucks in Stamford, Connecticut. The entrance can be found on the corner of Broad Street and Summer Street, to the left to the main public library with its plain pediment and slim Ionic columns. The location right next to the library harmonizes with Starbuck's marketing plan. At the entrance of the coffee shop a life-size glass window curves around to the left, providing superb voyeuristic views of pedestrians on the sidewalk. As you enter, you step directly into the living room area with stacked bookshelves against the back wall. Velvet armchairs face each other with small coffee tables in the middle, creating intimate seating areas. The velvet chairs near the window are the prime seats, which people unfortunate to score a wooden chair prey upon. At the back of the long rectangular room is the coffee bar and a small Starbuck's gift shop. There is a dark wooden table with electrical outlets suited for spreading out laptops and spreadsheets, dividing the living room area from the coffee bar.

Since I have been cranky for weeks I hesitate to order a regular black coffee. It is very easy to get cloyed with a favorite food or drink in the US because of the super-sized portions served. The smallest cup of coffee is a size 'tall' (12oz.=0.35l.), after which one can choose between a 'grande' (16oz.=0.5l.) and a 'venti' (20oz.=0.6l.). Half a liter of coffee seems a bit over the top, and it sounds absolutely absurd to my European mind. I finally end up choosing a 'solo' espresso.

Sitting in one of the booth-like seats against the back wall, unable to obtain a prime seat, I feign to read my book while eavesdropping on conversations around to me. Three middle-aged men sit in three ash gray velvet chairs and converse loudly. A vivid dialogue develops, exchanged with half roaring, half shrieking, laughter. They mock a colleague in his absence and then clench their brows in concern while discussing the teeth of one of the men's daughter. Two African-American women sit at a small table opposite the reading-table in the murky light, one of them with a yellow headscarf with black African motifs. Close to the entrance, in the seating area next to the animated conversation, a vagabond is playing solitaire. One by one he places the creased cards with rounded backs over one another, as if he attempts to stick them together. He rendered a couple of dollars in exchange for a small coffee to feel, in the warmth of the front room, nostalgia for a cozy living room and relives a sense of intimacy of having your own house.

It's a bright, sunny, early autumn day, a typical New England Indian summer. Sunbeams radiate through the coloring, flickering foliage, and throw a puzzle-shaped shadow into Starbuck's window. Autumn's hand turns her colorful kaleidoscopic lens. The green ash tree near the sidewalk resembles, with its polychrome colors, somewhat a bronze statue: its stem sulphur bronze, its foliage intermittently copper green and ferric-nitrate golden. On the other side of the cross walk the top of a young red oak turns fiery red. These are the budding impressions of the autumn foliage for which Connecticut is 'world famous' in the US.

In the world of marketing and entrepreneurship, Starbucks is a success story. It is one of those stories of ‘excellence' taught as a case study at business school. Founded in 1971, it really began its incredible growth under Howard Schultz in 1985, and presently has 6,294 coffee shops. But what does its success really consists of? A large cup of coffee at Starbucks is much more expensive than at Dunkin' Donuts: $2.69 compared to $3.40 for a Starbucks' ‘venti'. But while Dunkin' Donuts offers only a limited assortment of flavors like mocha, hazelnut, vanilla, caramel and cinnamon, you will find exotic quality beans at Starbucks like Bella Vista F.W. Tres Rios Costa Rica, Brazil Ipanema Bourbon Mellow, Colombia Nariño Supremo, Organic Shade Grown Mexico, Panama La Florentina, Arabian Mocha Java, Caffè Verona, Guatemala Antigua Elegant, New Guinea Peaberry, Zimbabwe, Aged Sumatra, Special Reserve Estate 2003 - Sumatra Lintong Lake Tawar, Italian Roast, Kenya, Ethiopia Harrar, Ethiopia Sidamo, Ethiopia Yergacheffe and French Roast. So Starbucks offers luxury coffees and high quality coffee dining, reminiscent almost of the chic coffee houses I visited in Vienna.

Every now and then, I grin shamefully and think back at my endless hesitation choosing between the only two types of coffee available in most Dutch stores: red brand and gold brand. Even up to this day I have no clue what the actual difference is between the two, apart from the color of the wrapping: red or gold. Not surprisingly, Starbucks appeals to the laptop genre of people: consultants, students, intellectuals, the middle class, and a Starbucks coffee is a white-collar coffee, while a Dunkin' Donuts coffee is a blue-collar coffee. In Dunkin' Donuts you will run into Joe the Plumber, Bob the barber, and Mac the truck driver. But what is it exactly, that attracts the white collared workers in the US to fall back into the purple velvet chairs?

I imagine their working days filled with repetitive actions and decisions within a playing field of precisely defined responsibilities. How many of the players in these fields get through the day with its routines for simply no other reason than being able to enjoy their daily 30 minutes-escape into the Starbucks intimacy where, for a brief moment in the day, you regain the illusion of human warmth and exotic associations of resisting the coldness of high finance?

For 15 minutes you fall back into the deep, soft pillow of a velvet chair and randomly, and alas how important is that moment of utter randomness, pull a book from the shelves. While, in the background, soothing tones resound of country blues, with its recognition of deep human suffering, a blaze of folk with the primary connection with nature and tradition, or of merengue reviving the passionate memories of adventure and love, you gaze out the window and ponder about that simple, volatile reflection in the moment, strengthened by the physical effect of half a liter of watery coffee that starts to kick in and the satisfaction of chewing your muffin, bagel, cake, brownie, croissant or donut.

It is, above all, that bodily ecstasy caused by a combination of caffeine, sugar and the salivating Pavlov effect. You remember the struggling musician behind the counter taking your order, the amateur poet as you pay her for the coffee and give a full dollar tip, feeling a transcendental bound in your flight from reality. You stare with a fastened throbbing of the first gulps of coffee at the advertisements and poems on the bulletin board, and dauntlessly you think: They are right, they are so right! and what do I care? Why should I care? Fuck my boss, fuck the system, fuck everybody!'

But then you look at your watch and notice you really have to run again. 'Well, too bad, gotta go!', or people will start gossiping for being so long away from your desk. And while you open the door, an autumn breeze blows in your face, the last tunes of the blues solo die out as the Hammond organ whispers: 'I throw my troubles out the door, I don't need them anymore'.

Coffee in the US is a subculture that massively floated to the surface of the consumer's society. Starbucks is more than coffee, it's more than just another brand on the market, it is a social-political statement, a way of perceiving how you would like to live, in other words it is a culture. Starbucks is the alternative to Coca-Cola and so much more than just coffee: it's chocolate, ice-cream, frappuccino, travel mugs with exotic prints, cups and live music, CD's, discounts on exhibitions and even support for volunteer work.

New Career; Coffee Franchise Options, Good or Bad?

Are Coffee Shop Franchises a good business? Well consider the average Starbucks does over $80,000 per month. An interesting book primer to learn more about the coffee business might be "Pour Your Heart Into It" by Howard Schultz. It is worth a read and you can find used books on Amazon.com cheap enough, you will be glad you did.

Of course Starbucks is not a franchise. Recently, I met the head trainer for one of their licensees; Sheridan Hotels which was putting 1000 Starbucks Coffee Shops in their Hotels. But for the average person you cannot become a licensee or franchisee in the United States. So, you will need to look for other options such as; Coffee Beanery, Caribous or It's a Grind. Actually there are about 8 fairly good and growing options out there now. Now then, over all in studying Coffee Shop industry.

I have also talked with many franchisee's as I travel the country and do a little business writing and most are very happy with their businesses. One former franchisee said his business had failed, but as far as the Coffee Franchise option, well that is a good business model so I am not sure what went wrong there.

He claimed that it was not his fault and that arbitration was stacked against the franchisee and yet in arbitration both sides have equal say generally my experience has been that arbitrators are usually way too liberal and pro-franchisee, siding with them and not with the Franchisor. Consider this in 2006.

This group of real Americans is not swayed by the political correctness observed on television. However, there is a group of people who we should probably call the silent majority who feel otherwise. Many people simply take and the nightly news and adopt those opinions discussed on television as their own. It is truly amazing to see what people really think about the war in Iraq and the price of oil in towns and cities across this nation.

One gentleman the other day told me; let's just nuke the Middle East and take the G-darn oil. As I sit in coffee shops across the country and meet with people who work for a living and have a family they often say things off-the-cuff that are a little disturbing. They say such things as; This is not right and it is unacceptable. In fact, when you listen to these people talk you get a whole different perspective of what is going on and what people really think about.

Consider this in 2006. It appears that people are getting very upset and when Iran threatens to raise the price of oil people are just that angry. Another one told me; $500 billion for Iraq might say they owe us some oil and a lot of it.
